Removing the Membrane From RIbs

   Removing the membrane from the back of your slab of ribs is a good thing. There is a little debate over it and no, it won't hurt you at all to leave it on. I simply don't want to deal with it on my plate! It can become tough and dry especially on St. Louis style ribs. Without further ado, here it is...

  1. With a paper towel, grab the membrane when you have a short flap of membrane separated. Start from the smaller end.
  2. Gently pull the membrane towards the opposite end of the slab. Be careful to pull slow and steady. Try to work towards each edge if necessary to insure you are pulling the complete membrane off.
  3. If the piece you are pulling on tears off, get another start and try again. Pretty soon you will get the hang of it and be an "old hand."

   Don't get frustrated. Nothing good comes easy. Practice, practice, practice!!! 

   And remember, "Keep It Spicy!"
